High Fiber COOKIE Recipe!

Also known in our household as BIRDSEED COOKIE RECIPE!!!

Here’s a cookie recipe I adapted from a school cookbook and is a favorite.  It is a never fail recipe, and easy to make.  If you feel the dough is too stiff, add a teaspoon or so of water.  Feel free to substitute ingredients.  I often roll the dough into a log and freeze it.  Make fresh cookies when you want them.

Ingredients:
1 cup butter
1 1/2 cups brown sugar (I replace some of this for maple syrup or honey)
2 eggs (or egg replacer)
2 cups whole wheat flour
1 cup coconut
1 cup Rice Krispies (or Corn Flakes)
1 cup chopped apple
1/2 cup sesame seeds
1/3 cup wheat germ or oat bran
1 tsp vanilla
1 tsp baking powder
1 tsp soda
1 cup oatmeal
1 cup raisins (or other chopped dried fruit)
3/4 cups sunflower seeds
1/3 cup flax seeds
1/4 cup whole bran

Preheat oven to 350 degrees F.

Mix together flour, baking powder, baking soda.
Beat together sugar and butter at medium speed until light and fluffy.
Add eggs and vanilla beating well after each addition to the sugar mixture.
Stir flour mixture into sugar mixture plus the remaining ingredients.

Shape dough into 2-inch balls and place 2 inches apart on baking sheets. Press down with a fork to flatten the cookie.  You may roll the dough into a log, freeze, and bake when you want fresh cookies.

Bake at 350 degrees F for 8-10 minutes or until golden and set.
